Saving money by correctly identifying bread - how edible labels eliminated unnecessary waste

Imagine this situation: you have two loaves of bread. Both are the same shape, size and colour. One is organic - with a higher price, better ingredients and a higher profit margin. The other is regular. But a customer or a shop assistant mixes them up in the shop. Instead of the organic loaf, they take the regular one - or vice versa.

You lose margin. You lose trust. And it can be easily avoided.

One loaf of bread, two problems – and one solution

Our client, a medium-sized bakery supplying several retail chains, was faced with a recurring problem. They produced two almost identical loaves of rye bread - one regular, the other organic.

So what happened?

  • Shop assistants often couldn't tell the difference when scanning.

  • Customers in the self-service areas would take the cheaper product.

  • As a result, the organic bread was mislabelled and sold below price

  • In some cases, the store had to complain about the difference in delivery because the stock did not match.

This "small" problem is very expensive in large quantities. Each mislabel meant a loss of several euros - which multiplied into hundreds with daily deliveries and thousands per month.

Edible labels as a simple and effective tool

Together, we designed a simple solution: an edible label with the word "BIO" printed directly on the surface of the bread.

  • The label is clearly visible, even from a distance on the shelf.

  • There is no need for shop assistants to search for labels or refer to ingredients.

  • Customers know exactly what they are buying.

  • The bread looks more premium and trustworthy.

  • And the difference between products is clear at a glance.

The result? Labelling errors have virtually disappeared. Organic bread has become much more visible, sales have increased and the bakery has saved tens of thousands of euros a month in complaints and losses due to mis-selling.

Why it works – and why you should care

In retail, there is no room for complicated explanations. Labelling needs to be immediate, simple and clear. An edible label is essentially a small billboard on bread - visible to the clerk, the customer and the self-service system.

Unlike traditional labels:

  • it cannot be accidentally forgotten,

  • it cannot be lost during handling

  • it is hygienic, environmentally friendly, and waste-free.
